According to Roskoshchestvo, a slight clouding of the brine does not always indicate damage. This happens because of hard water, iodized salt or poorly washed cucumbers. This does not make the product dangerous, but it can spoil the taste and shorten the shelf life. But if the banks and lids are poorly processed, the risk of damage increases.
In Roskachestvo explained: very murky brine, mucus, foam, gray or greenish flakes, white threads, gas bubbles and a bloated lid are all signs that harmful microorganisms have started in the bank. Such blanks cannot be opened or tried. A bloated cover means that there is an active gas formation inside.
A separate danger is botulism. Its pathogen has no taste, no color, no smell. Therefore, clear brine does not guarantee that the product is safe.
Since the beginning of 2026, at least 19 cases of botulism have been recorded in Russia. These incidents were recorded in the Moscow, Orel, Tula, Voronezh, Astrakhan regions, as well as in St. Petersburg. Some of the cases are believed to be related to the consumption of homemade canned food, mushrooms, fish and meat.
