Nutritionists called vegetables that are better to eat raw
Some vegetables may lose some of their nutrients during heat treatment

Some vegetables may lose some of their nutrients during heat treatment. Nutritionists Lisa Andrews, Juliana Creamy and Trista Best told the publication Eating Well, which foods are better to eat without cooking and frying to keep the maximum of vitamins and antioxidants.
First on the list was broccoli. According to Andrews, it contains vitamins A, C and K, folic acid, calcium, iron and potassium. These substances are essential for heart, bone and bowel health. However, when heated, some of the vitamin C and other beneficial compounds are destroyed, so raw broccoli allows you to get more of them.
Another vegetable that experts advise not to subject to heat treatment is beets. Nutritionist Juliana Krimi explained that in raw root vegetables are better preserved antioxidants, vitamin C and natural nitrates that contribute to the normal functioning of blood vessels. Beets can be rubbed into salads, added to smoothies and other dishes.
Closes the three sweet Bulgarian pepper. Trista Best noted that one raw red pepper can contain about twice as much vitamin C as an orange, as well as almost 20% of the daily intake of folic acid. It is also rich in polyphenols, which help protect cells from oxidative stress. Experts stressed that eating these vegetables raw helps preserve more heat-sensitive nutrients.
