“Central heating and the kitchen, where the stove is adjacent to the shelves, create a temperature above the recommended, and constant contact with heat and light accelerates the oxidation of fats – long before the expiration date,” she explained.
This primarily applies to cereals with a high content of oils. So, oatmeal is stored only four months, millet - nine to ten months, and semolina - ten months. Flour and cereals absorb moisture and foreign smells, and pests are easily injected in bags and open packages, for which the kitchen cabinet becomes a comfortable environment.
Vegetable oil is also not worth buying for the future in large volumes: after opening the bottle, oxidation begins, which light and heat at the stove only accelerate.
Spices with long storage gradually lose their aroma. Ground seasonings retain their properties for about a year and a half, while whole grains and pods can lie for up to four years.
Special attention is required nuts, especially peeled ones. At room temperature, they are stored for a few weeks, and increased humidity and heat are fraught with the appearance of mold. For long-term storage, it is better to keep nuts in the refrigerator or freezer, rather than in the kitchen cabinet.
As noted by Spetsenko, honey at temperatures above 20 degrees crystallizes faster and loses its properties, and an open jar is stored for no more than a year.
Thus, when purchasing products for the future, it is important to take into account not only the shelf life on the package, but also the conditions in which the stocks will be at home.
