Do not pour water immediately - you will extinguish, the panning will get wet. You want the gravy separately.
How do you know what's ready
Crust is no guarantee. Cut the thickest cutlet: there should be no raw mince inside. The juice is transparent - a plus, but not a guarantee.
More specifically, a thermometer. According to USDA: beef, pork, mixed ground – 71 °C, chicken and turkey – 74 °C, fish – 63 °C. Put the probe in the side, the tip in the center.
