Cold, or jelly, is prepared on the basis of concentrated broth. According to one version, it was invented by the northern peoples: meat soup was carried out in the cold, it acquired a jelly-like structure and saturated well. In winter, the jelly was taken with herders, hunters, warriors and travelers. In rich houses, the remnants of the feast were poured with broth, cooled and given to the foreheads, although the forehead was very loved by Peter I.
The first recipe for this specific dish was recorded in Vasily Levshin’s book “Russian Cook” in 1816: peeled beef legs, ears and lips were boiled for a couple of hours, then the meat was poured with a decoction and put “in a cold place to freeze.” Served with garlic and sour cream.
The cooler contains vitamins A, B12, B3, potassium, magnesium, iron and phosphorus. It is advised for joint diseases, problems with the musculoskeletal system, to increase hemoglobin, strengthen immunity and vision. However, the dish is contraindicated in diseases of the gastrointestinal tract, liver and gout.
