As the interlocutor of the publication noted, initially the relationship between the color of the yolk and the quality of nutrition of chickens really existed, and free-range birds walked around the yard and pecked grass, with which they received carotenoids - lutein, zeaxanthin and beta-carotene. It is these substances that give the yolk yellow and orange shades, the expert specified. She drew attention to the fact that along with this chickens on free grazing pecked and other bark, due to the diversity of which they accumulated more vitamins.
The speaker pointed out that the brightness of the yolk really for a long time could serve as a kind of marker for a more diverse chicken diet, because the chickens contained in the factories received less diverse feed, more often did not have such a number of plant pigments, and their eggs differed more pale yolk.
Today, according to Solomatina, this principle does not work directly. She stressed that poultry farms can add plants and other components containing carotenoids to feed, as a result of which even birds that have never been free-range can get a rich orange yolk.
