Over the year, the number of vacancies for sushis in the Penza region increased by 43%, and the average proposed salary reached 85 thousand rubles per month. This is evidenced by the results of a study of analysts “Avito Work”, which leads RIA Novosti.
Experts studied the situation on the labor market in the field of catering in the third quarter of 2026. They compared the number of vacancies and salary offers in the Russian regions with the same period in 2025.
According to the study, Penza region was among the three regions with the most noticeable growth in demand for sushis. The higher figure was only in the Kaluga region, where the number of such vacancies increased by 69%. At the same time, employers there offered specialists an average of 62,400 rubles a month.
Another region included in the three was the Tver region. Here, the demand for sushis has increased by 30%, and the average salary offered was 90 thousand rubles.
Avito Work associates the growth of demand for catering staff with the development of the local market and the opening of new establishments that require specialists.
At the same time, the highest average salary offers in the catering industry as a whole were recorded in Moscow - 90,739 rubles a month. This is followed by the Moscow region with an indicator of 86 596 rubles and St. Petersburg, where employers offer an average of 79 912 rubles.
The popularity of Japanese cuisine among Penzen residents can be judged by the number of places where sushi and rolls are offered. So, when searching for “Sushi rolls” in the 2GIS service in Penza, more than 90 establishments and delivery points are displayed. Employers strive not only to meet the demand of Penza residents for Japanese cuisine, but also to maintain competitiveness. For this they need qualified specialists.
